This, I am well aware, is not going to be ground-breaking. But it is delicious and an excellent back-up to have in your dinner party armoury.
Mayonnaise - 4 large heaped tablespoons
Tomato ketchup - 2 tablespoons
Horseradish sauce - 1 teaspoon
Worcestershire sauce - couple of shakes
Juice of half a lime or lemon depending on what you have hanging about
1 teaspoon of brandy if you have some - (don't buy any specially though as it to be honest it probably doesn't make much difference)
Prawns - small ones, king ones - whichever you prefer
Mix all the ingredients except the prawns together - taste and mess about with it till you're happy - this may make too much sauce for that amount of prawns so you can keep some for later, and you may want to tweak the mayo/ketchup balance for the perfect shade of pink.
Stir in the prawns. Taste a few to check.
