WIP Cocktail Club #3: Pinkest Royale
Don't get me wrong, I know first world problems when I see them, but blimey coming up for names of these cocktails is exhausting. Making the recipes up is, obviously, quite a lot of fun - even if it does make me slightly scared that someone will knock on the door to find me tasting a gin cocktail at 11am on a Tuesday... But the names. Sheesh. Anyway, this month, a version of the traditional Kir Royale, just got me obsessed with Pulp Fiction and the whole "Royale with Cheese" thing. And it's pink. So...anyway - other suggestions welcome!
This is a lovely drink for a sunny evening, but it's also excellent at 11am on a Tuesday morning (just don't answer the door).
Makes two cocktails (to share with another Woman in Progress perhaps?)
30 ml Pinkster gin (a delicious pink gin made with raspberries - available in lots of places)
30 ml St Germain (love this stuff)
40 ml Crème de cassis
200 ml prosecco, chilled
Couple of edible flowers (I used violas from the garden (get me) but you can buy edible flowers online)
Over ice, mix all your ingredients except for the prosecco and flowers. Pour equally into two champagne glasses, and top with the prosecco. If you have edible flowers to hand, put one on the top and take some pictures of it. So many pictures of it. Instagram it. Drink it. Feel smug.
